Mom's Mexican Layer Dish

Ok, I must really love you to be sharing this one. I can't tell you how many times my mom made this for large family gatherings. Everything can be made ahead of time and the cheese sauce just tops it off so well! This is easy to make and economical for serving a crowd. Half the recipe if you need to.

These are numbered in the order you layer them on your plate:
1. Crushed Fritos
2. Cooked white rice
3. Meat sauce: 4 lb. ground beef/turkey (cooked and drained), 1 pkg taco seasoning, 1 tsp. garlic salt, salt and pepper, 1 can tomato soup, 1 small can of tomato sauce, 1 small can tomato paste, 1 can mushrooms (drained), 1 28 oz. can of chopped stewed tomatoes. Cook in Large pot on stove for 1 hour on medium heat. Once it is cooked you can put it in a crock put to stay warm until ready to serve.
4. Chopped lettuce
5. Cheese sauce: 2 cans of cheese soup, 1 can evaporated milk, 1/2 cup grated cheddar cheese (or more to taste). Cook in saucepan until melted and combined.
** You can even take some of the meat sauce and freeze it for a later time.
